Of course we have to start with the dough! You can use a basic recipe of flour, eggs, and a pinch of salt, and then knead the dough until your arms get tired. Once you've kneaded the dough and let it rest, to roll it out into thin sheets by using either a flour-dusted rolling pin or a pasta machine. The thinner the sheets, the more delicate and tender your ravioli will be.
Next is the cheese filling. You can use a combination of ricotta, Parmesan, and mozzarella for a creamy and flavorful filling. Add a touch of salt, pepper, and maybe some fresh herbs like parsley or basil to enhance the flavor.
Once you've made the filling, it's time to assemble the ravioli. Place small spoonfuls of the cheese mixture onto one of the pasta sheets, leaving enough space between each one to fold the dough over and seal the edges. Brush some water around the edges of the filling, then carefully place another pasta sheet on top. Gently press down around the filling to remove any air bubbles and seal the ravioli.
Using a ravioli cutter or a knife, cut the individual ravioli into squares or circles. Make sure to press the edges firmly to ensure the ravioli stays sealed during cooking.
Bring a large pot of salted water to a boil and carefully drop the ravioli in to cook. Since fresh pasta cooks much faster than dried pasta you only need to boil these for a few minutes.
You can't forget a delicious sauce for your ravioli! A classic marinara, a sage and butter sauce, or even a simple olive oil and garlic sauce all work beautifully with classic cheese-filled ravioli.
Once the ravioli is cooked, carefully remove them from the water and toss them with your chosen sauce.
I love to sprinkle some extra parmesan on top and enjoy while it is still soft and the cheese is gooey.
