Holiday Eats 2020

Like many things for a lot of people this year the holidays looked a bit different. Under normal circumstances we spend the holidays celebrating and enjoying time with our extended families. With everything going on with Covid-19 and the cases worsening across the tri-state area, we decided it was best for our families to spend the holidays alone this year. While we missed the holiday experience we looked forward to all year (like so many others we clung to the hope that covid would resolve before the holiday season) we were not going to miss the opportunity to prepare a feast for two! December Recap - Holiday Season!

Now that we are firmly into that awkward period between Christmas and New Year I thought it would be a good time to do a quick December update with a few things that happened over the last month.

A Corgi Christmas Cross Stitch Stocking

Years ago I made my husband and I cross stitch stockings to hang in our first house after we we married. Now that we have added Bella our corgi puppy to the mix I wanted to make her a stocking too -- yes, I'm that dog mom. But I didn't think a standard stocking shape made sense since she doesn't have feet and I definitely did not want to undertake the time commitment it takes to complete actual stockings. So I set out to design my own!

Wimpy Burgers, Surgery, and voting!

It's been too long since I did a recap. The problem is with covid-19 and everything we're not really doing anything overly worthwhile and I think a weekly recap would be so boring to read since it's just wake up, work, lunch, work, watch TV, sleep. I'm trying to figure out what to write about during these times since really I feel like we're living one big Monday over and over again. We took a road trip out to my college town for a little nostalgia--dinner at our favorite college restaurant. They make "wimpy burgers" (mini burgers) and the best "rhino fires" (cheese fries with bacon and ranch). Obviously it's not the healthiest option but everything in moderation right?

Coexist with the chaos.

I'm so glad today is Wednesday because it means tomorrow is Thursday and then we're basically onto the weekend! It has been such a chaotic week so far and I am looking forward to the brief break the weekend brings. I have some bigggg plans to clean our house this weekend, lol. I like to do a "deep clean" twice a year when the weather changes (can you believe how dirty trim gets??) and as we enter into the fall season I figure it's a good time to clean things up.

Anyway today was another busy day of working from home. I had an early conference call to discuss strategy with one of my clients. Luckily we were on the same page and the call went quickly. After the call wrapped up I made some breakfast.

Quick & Easy Skinny Dessert (72 calories Chocolate "Crack")

Saltines? As a dessert? Bear with me here--it is so so good! This dessert is called "crack" and I can totally see why. It's the easiest dessert to whip up for a last a minute party (who is going to parties right now?!) or if you just have a hankering for something sweet in a hurry. And it is SO GOOD.

Frustrated. But recalibrating.

The frustration is real. I've been on this journey for how long? I started this blog on November 2, 2019 so I guess I hit 16 weeks already. And I have to say, I'm disappointed. And frustrated. And all those feelings that go along with when you set a goal for yourself and don't reach it.

A New Addition to the Workout Regimen

I am super excited because we decided to go ahead and purchase our very own Peloton Bike. After taking the class with my sister in NYC (and me talking about how much fun it was and how great a workout it was) my wants-to-lose-weight husband began to agree that we needed a bike in our lives. We weighed the options of getting a cheaper bike and just using the Peloton App to access the classes but there was something about being able to match the cadence and resistance perfectly with what the instructors called out that made us prefer the actual Peloton Bike. We also were notified that Peloton was running a special deal where you would get a pair of shoes, weights, earbuds, and the mat for free with purchase. A $200some value?? Done deal! We ordered the bike on a Monday and I think it was here within 3 days. I wasn't here when they actually delivered the bike so I don't know how the deliver experience was but it seemed to go fine and we were able to start using our bike immediately. So, my new plan is going to be to try and ride the bike 30 minutes or more five times per week.

New Year New Progress

Progressing into a new year is always a good opportunity to wipe the slate clean, start over where you want, make changes where you need, and otherwise just get a fresh start. I usually end up making some kind of "new year, new me" whimsical promise to myself -- which is broken pretty much by the end of the first week of January. So this year I am making very specific and concrete intentions that I can achieve. Unfortunately, I'm starting this year off with a bang--I'm currently sick with either the flu or a really bad head cold--so I probably won't actually start this list until I am feeling better. Above all I think my 2020 intention is to just to be more mindful with my body. Slowing down when I need to, listening to my body when it's trying to tell me something, and pushing it out of its comfort zones when I can. For now, it needs rest, water, and chicken soup. But hopefully I'll be well again real soon because I am so ready to start crushing these intentions, making SO much progress, and becoming my best self in 2020. What are your goals for 2020?
